Today is my Mom's birthday and even though she is no longer with us, I like to celebrate as I know she would like that ;-) She would be 69 today ...
I returned from Costa Rica about a week ago - I was there attending the Nosara Yoga Institute's Yoga Teacher 200 training. It was an amazing experience! One of the things I loved about being in Costa Rica was the wonderful fresh fruit - I ate yummy mango, pineapple and bananas every day.
So, I thought I would create a special smoothie (Costa Rican style) and dedicate it to my Mom for her birthday - she always loved warm places!
Mom's Birthday Smoothie
1 cup pineapple
1/2 mango
1 banana
1 1/2 cup coconut water
1 dropper of marine phytoplankton (omegas, B's, complete protein)
1 tsp maca powder
& add lots of love as you blend :-)
